Starch is a polymer that is used as an energy storage compound in animals and plants. It is a chain of glucose monomers that can be easily broken apart when needed. It is a branched compound, composed of glucose molecules held together primarily with α-1,4 glycosidic linkage. Branches are formed by α-1,6 glycosidic linkages. (2.1 MB)
